Apple Butter Streusel Muffins

These muffins are sugar and spice and everything nice! They really do belong in a bakery during cool months. I love that they have the ability to be changed to fit your liking.

Ingredients

Batter

  • 2 cups flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 large egg
  • 3/4 cup milk (almond milk if you have dairy intolerance)
  • 1/2 cup avocado oil
  • 2 tbsp apple butter for mixing in batter
  • 1/3 cup apple butter for spooning in layers
  • 1/3 cup hemp seed (for protein)

Streusel

  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup chopped almonds or walnuts
  • 4 tbsp softened butter (dairy-free if you have dairy intolerance)

Glaze

  • 1/2 cup powdered sugar
  • 1 tbsp apple butter
  • 2-3 tbsp water

Directions

Streusel

Step 1

Mix all streusel ingredients together. Set this aside for use in next steps. 

Batter

Step 1

Preheat oven to 400 degrees. 

Step 2

Mix all dry ingredients for the batter together and set aside. 

Step 3

Mix all wet ingredients for the batter EXCEPT the 1/3 cup of apple butter. 

Step 4

Combined the dry and wet ingredients.

Step 5

Place 1 scoop of batter into the muffin tins

Step 6

Add a spoonful of apple butter over the batter

Step 7

Sprinkle streusel on top of the apple butter

Step 8

Add the remaining batter over the top of the streusel and then sprinkle with the remaining streusel 

Step 9

Bake at 400 degrees for 5 minutes, then turn the temperature down to 350 and bake for an additional 13 minutes. 

Glaze

Step 1

Mix the powdered sugar and apple butter together.

Step 2

Add water until you have a nice consistency for a glaze. 

Step 3

Once the muffins are mostly cooled, drizzle your glaze over the top of the muffins
